Spice up your dinner with this delicious, healthy taco recipe (dietitian-approved!)

If you’re on the lookout for a dish that’s sure to please everyone while also packing a punch in terms of nutrition, why not turn to the classic crowd-pleaser: beef tacos?
Not only are they quick and easy to prepare, but they also offer a good serving of protein and fibre to ensure that everyone leaves the table satisfied and nourished.

 

Healthy taco recipe

Ingredients:
• 1 clove garlic, crushed
• 1 small onion, finely chopped
• 250g lean beef mince
• 1 teaspoon dried thyme
• 1 teaspoon cumin
• 1 tomato, cut into small cubes
• 2 tablespoons tomato paste
• ½ cup water
• 300g can of red beans, drained and rinsed
• Taco shells
• Shredded iceberg lettuce
For the salsa:
• 1 small tomato, finely chopped
• Finely chopped cucumber
• Red onion, finely chopped
• Optional: Finely chopped coriander or mint

 

Method:
1. Heat a small spoonful of olive oil in a frying pan. Add the onion and stir until it’s soft. Toss in the garlic and mince, stirring until the mince is brown all over.
2. Mix in thyme, cumin, chopped tomato, tomato paste, and water. Cover and simmer on low heat for 20 minutes, stirring occasionally, until the beef is well cooked. Stir in the beans towards the end to warm through.
3. Place taco shells on an oven tray and heat for 5 minutes.
4. To make the salsa, combine the chopped tomato, cucumber, and red onion in a small bowl. Add mint or coriander if desired.
5. To serve, spoon the beef mixture into the warm taco shells. Top with salsa and shredded lettuce.

Each serving of these tacos makes around 8 small services with approximately 14g of protein and 4g of fibre, making them a satisfying meal that supports your nutritional goals.
