Chicken and Vegetable Casserole (Serves 6)
Ingredients
- 1 tablespoon olive oil
- 600 g chicken thigh fillets, quartered
- 1 red onion, chopped
- 2 large carrots, peeled, halved & thickly sliced
- 2 cloves garlic, crushed
- 2 tablespoons plain flour
- 2 tablespoons chilli pesto
- 1½ cups chicken stock
- 1 red capsicum, chopped
- 375 ml light coconut milk or light evaporated milk
- 150 g green beans, trimmed & halved
- 2 tablespoons fresh parsley, chopped
- Salt & pepper to taste
Method
- Heat olive oil in a heavy-based casserole dish over medium-high heat.
- Brown chicken in batches for 5–6 minutes. Transfer to a plate.
- In the same dish, sauté onion for 3 minutes until softened.
- Add carrots and cook for 5 minutes until lightly golden.
- Stir in garlic and cook for 1 minute until fragrant.
- Add flour and stir for 1 minute to cook out the raw taste.
- Mix in chilli pesto and chicken stock. Bring to the boil.
- Return chicken to the dish, reduce heat, cover, and simmer for 45 minutes.
- Add capsicum and simmer uncovered for another 15 minutes.
- Stir in milk and green beans, season with salt and pepper, and simmer for 5 minutes.
- Finish with fresh parsley and serve.
