Chicken With Cashews
Chicken comes out on top as the most popular meat eaten by our patients.
Following weight loss surgery, chicken is not only an economical choice, but reportedly easier to eat than other meats.
Chicken is high in lean protein, essential nutrients and can be readily made into a flavoursome addition for any meal.
Ingredients
- ½ tablespoon olive oil
- ½ tablespoon peanut oil
- 1 cup of lightly toasted cashew nuts
- 800g chicken breast fillets – thinly sliced
- 1 medium red onion
- 2 spring onions finely chopped
- 2 cloves of garlic, crushed
- 200g green beans, trimmed and cut into quarters
- 2 medium carrots, cut into straws
- 2 tablespoons low salt hoisin sauce
- 1 tablespoon low salt soy sauce
Directions
- Heat a large frying pan or wok. Add almonds and toss around pan until slightly brown. Remove from wok.
- Heat half the oils in the pan. Cook chicken slices in small batches. Brown slices all over until just cooked. Remove chicken from wok.
- Add remaining oil to pan. Heat and add onion, spring onions and garlic then stir-fry until soft and fragrant. Add sauce, beans and carrot, stir-fry until tender. Return chicken to wok; add remaining sauces and stir-fry until chicken is cooked. Toss cashews through mixture.
Blanched almonds can be a substitute for cashews.
