Falafel
Falafel is a nutritious and flavorful dish made primarily from chickpeas or fava beans, blended with herbs and spices, and shaped into balls or patties. It is rich in plant-based protein, dietary fiber, and essential vitamins like B6 and folate. Falafel is naturally vegetarian, often vegan, and provides a satisfying, crunchy texture when fried or baked. Traditionally enjoyed in Middle Eastern cuisine, falafel is a versatile option, commonly served in pita bread with fresh vegetables, hummus, and tahini sauce. It can also be used as a protein-packed topping for salads or a snack on its own.
Ingredients
- 3/4 cup chickpeas
- 1 teaspoon coriander seeds
- 1 teaspoon cumin seeds
- 1 onion
- 1 clove garlic, chopped
- 1/2 cup chopped flat leaf parsley
- Pinch cayenne pepper
- Olive oil frying
Directions
- Put chickpeas in a bowl, cover with plenty of water and soak overnight.
- Drain and place in a saucepan with water, bring to boil, reduce heat and simmer for one hour. Drain.
- Toast coriander and cumin seeds in a frying pan over heat for a few minutes – do not burn.
- Remove from pan and leave to cool then grind with a mortar and pestle or in a grinder.
- Place cooked chickpeas, ground seeds, onion, garlic, parsley, cayenne pepper and salt in a blender and lend to form a thick paste. Shape mixture into small balls and press lightly to flatten. Heat about 2 cm of oil in a large nonstick frying pan over high heat. When oil is hot, shallow-fry the felafel in batches for about 3 minutes on each side or until golden brown and crispy. Orin on paper towel.
Serve with a little tahini.
