Lemony Moroccan Meatballs Recipe
Ingredients
For the Meatballs:
- 700g lean beef mince
- ½ cup multigrain breadcrumbs
- ¼ cup low-fat milk
- ½ cup onion, finely diced
- 2 cloves garlic, finely chopped
- ½ cup parsley, chopped
- 1 large egg
- 2 teaspoons cumin
- 1 teaspoon cinnamon
- Ground pepper to taste
- 1 tablespoon olive oil (for cooking)
For the Sauce:
- 1 small onion, chopped
- 2 teaspoons turmeric
- 1 teaspoon lemon rind
- ½ slice lemon with skin on (or 3 wedges of preserved lemon)
- 1 tablespoon olive oil
- 1 ½ cups beef stock
Directions
Step 1: In a bowl, mix together all meatball ingredients until well combined.
Step 2: Shape into small meatballs.
Step 3: Heat 1 tablespoon of olive oil in a large saucepan. Brown the meatballs in batches and set aside.
Making the Sauce:
Step 4: In the same pan, heat 1 tablespoon olive oil and sauté the chopped onion.
Step 5: Add turmeric, lemon rind, and lemon slices, stirring for about 5 minutes.
Step 6: Pour in beef stock, bring to a simmer, and add the browned meatballs back into the pan.
Step 7: Cover and cook for 20-30 minutes over medium heat.
Step 8: Remove meatballs, then simmer the sauce until slightly thickened.
Step 9: Serve meatballs with sauce, topped with chopped mint and a spoonful of plain yogurt.
