Ingredients
- 750 mL chicken or vegetable stock
- 3 cm piece fresh ginger, julienned
- 2 cloves garlic, finely sliced
- 1 fresh red chilli, deseeded and chopped (optional)
- ½ savoy cabbage, shredded
- 1 carrot, julienned
- 2 tablespoons miso paste
- Low-salt soy sauce, to taste
- 100g silken tofu (alternative: cooked chicken)
Method
- Pour stock into a pan and bring to a boil.
- Add ginger, garlic, and chilli to the stock, cover, and simmer for 5 minutes.
- Add shredded cabbage and julienned carrot, cover, and simmer for 3–4 minutes until cabbage is wilted.
- Stir in miso paste and a splash of soy sauce to taste.
- Add silken tofu and let the soup stand for a few minutes before serving.
- Serve warm and enjoy a nourishing, light meal.
