Ingredients
For the meat filling:

1 tablespoon olive oil
-
1 brown onion, finely chopped
-
1 carrot, finely chopped
-
600g lean beef or turkey mince
-
½ cup red lentils, rinsed and drained

2 x 420g cans no-added-salt diced tomatoes
For the cauliflower topping:

600g potatoes, peeled and sliced
-
½ head cauliflower, sliced
-
1 cup skim milk
To serve:

Fresh green salad
Method

Preheat your oven to 200°C (fan-forced).

Cook the vegetables: Heat half the olive oil in a large frying pan. Sauté onion and carrot over medium heat until softened. Transfer to a saucepan.

Brown the meat: Add remaining oil to the frying pan, cook mince in batches until browned. Add to the saucepan with the vegetables.

Add lentils and tomatoes: Stir in diced tomatoes and red lentils. Bring to the boil, then reduce heat and simmer, covered, for 20 minutes.

Prepare the topping: Boil potatoes and cauliflower until very tender. Drain well, mash until smooth, and stir in skim milk.

Assemble: Divide the meat mixture into 8 individual ramekins (or one large baking dish). Top with the cauliflower-potato mash.

Bake: Place in the oven and bake for 30 minutes or until golden.

Serve: Pair with a crisp green salad for a complete, balanced meal.
