- 1 medium brown onion, coarsely grated
- ¾ cup fresh breadcrumbs, preferably from day-old bread

- 1 egg, lightly whisked
- Salt and freshly ground black pepper, to taste
- 2 ½ tablespoons olive oil
Method
Step 1: Prepare the Baking Tray
Line a baking tray with non-stick baking paper and set aside.
Step 2: Combine the Ingredients
In a large bowl, combine the veal mince, pork mince, grated onion, breadcrumbs, crushed garlic and lightly whisked egg. Season with salt and freshly ground black pepper.

Heat one-third of the olive oil in a non-stick frying pan over medium heat. Cook one-third of the meatballs, turning regularly, for approximately 8 minutes or until golden and cooked through. Transfer to a plate.
Step 5: Repeat and Serve
Repeat the cooking process in two more batches, reheating the pan and adding extra oil as needed. Serve warm with a fresh salad, steamed vegetables or another bariatric-friendly side option.
