Ingredients
- 1 tbsp olive oil
- 2 cloves garlic, crushed
- 2 cm piece ginger, finely grated

- 1 tsp soy sauce
- ½ tsp sesame oil
- Juice of ½ lime
- 3 spring onions, sliced

- 225g can water chestnuts, sliced
- 1 red chilli, sliced
- 2 baby cos lettuce
Method
- Heat a wok or frying pan over high heat until hot. Add olive oil, garlic, and ginger.
- Add chicken mince and cook for 5 minutes until browned and cooked through.
- Stir in oyster sauce and soy sauce.
- Add sesame oil, spring onions, and lime juice. Stir-fry for 3 minutes.
- Add bean sprouts and water chestnuts, mixing well.
- Spoon mixture into lettuce leaves, top with sliced chilli, and serve.
