Method
- In a mixing bowl, combine the egg whites, coconut flour, yoghurt, vanilla protein powder and baking powder.
- Whisk until the batter is smooth. If needed, add 1–2 teaspoons of water or low-fat milk to achieve a pourable consistency.
- Lightly coat a non-stick frying pan with low-fat cooking spray and heat over medium-low heat.
- Spoon the batter into the pan to create four small pancakes.
- Cook for approximately 2–3 minutes until the underside is golden brown.
- Flip carefully and cook for another 1–2 minutes until fully cooked.
- Serve warm with fresh berries, a spoonful of high-protein yoghurt or a small amount of sliced banana.
